  • 1 cup fresh raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 3 tablespoons cold water

Instructions

  1. Create a Fresh Raspberry Puree by pureeing raspberries with sugar and lemon juice in a blender, then strain to remove seeds.
  2. Bloom the gelatin by sprinkling it over cold water in a small bowl and let it sit for about 5 minutes.
  3. Dissolve the gelatin by gently heating the raspberry puree, then mixing in the bloomed gelatin until fully dissolved. Allow to cool slightly.
  4. Whip the cream in a mixing bowl with vanilla extract until soft peaks form.
  5. Combine the raspberry mixture with the whipped cream by gently folding them together.
  6. Pour the mixture into heart-shaped molds and refrigerate for at least 4 hours until set.
  7. Unmold and serve chilled, garnished with fresh raspberries.

Notes

For enhanced raspberry flavor, add extra raspberries. Store leftovers in the refrigerator for up to 2 days.
