  • 1 scoop Protein Powder (vanilla-flavored whey or casein)
  • 1/4 cup Sweetener of Choice (erythritol, stevia, monk fruit, or a blend)
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Juice
  • 1/2 cup Crushed Graham Crackers or Digestive Biscuits
  • 1/4 cup Melted Coconut Oil or Light Butter
  • 1 cup Fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup Sugar-free fruit compote
  • 2 tbsp Nut butter
  • 2 tbsp Sugar-free chocolate shavings

Instructions

  1. Prepare the Jars: Gather your jars, typically 8-ounce mason jars. Ensure they are clean and dry to get started.
  2. Make the Crust: In a medium bowl, combine crushed graham crackers with sweetener and melted coconut oil or light butter. Mix until it resembles wet sand.
  3. Assemble the Crust Layer: Spoon 1-2 tablespoons of the crust mixture into the bottom of each jar and press down to create an even layer. Refrigerate while preparing the filling.
  4. Prepare the Cheesecake Filling: In a large mixing bowl, beat together the softened light cream cheese, Greek yogurt, sweetener, vanilla extract, and lemon juice until smooth and creamy.
  5. Incorporate the Protein Powder: Gradually add the protein powder to the cream cheese mixture, beating on low speed until fully combined. Adjust with milk if the mixture is too thick.
  6. Fill the Jars: Spoon or pipe the cheesecake filling into the jars over the crusts, filling them about three-quarters full.
  7. Chill to Perfection: Cover the jars and refrigerate for at least 4 hours, preferably overnight.
  8. Add Your Toppings: Before serving, top your cheesecake jars with fresh berries or your favorite toppings like sugar-free fruit compote, nut butter, or chocolate shavings.

Notes

Use dairy-free cream cheese for a dairy-free version. Can be frozen, but add toppings before serving.
