A vibrant, nutritious dish that combines cottage cheese, eggs, and fresh vegetables, perfect for busy mornings or a leisurely brunch.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup spinach (chopped)
  • 1/2 cup bell peppers (diced)
  • 1/4 cup onion (diced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the cottage cheese and eggs until well combined.
  3. Stir in the chopped spinach, diced bell peppers, diced onion, salt, pepper, and garlic powder.
  4. Pour the mixture into a greased baking dish.
  5. Optional: sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes until the eggs are set and the top is lightly golden.
  7. Cool for a few minutes before cutting into squares and serving.

Notes

Best enjoyed warm but makes great leftovers. Store in an airtight container in the refrigerator for up to 3 days.
