A delicious and healthy dinner option featuring lean ground turkey and fresh vegetables stuffed in zucchini with a cheesy topping.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1/2 cup onion, chopped
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers.
  3. In a skillet, cook the ground turkey and onion over medium heat until browned.
  4. Stir in cooked rice, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  5. Fill the zucchini halves with the turkey mixture.
  6. Place stuffed zucchinis in a baking dish and sprinkle with cheese.
  7. Bake for 25-30 minutes, or until zucchinis are tender and cheese is melted.

Notes
