A hearty and easy-to-make Ground Chicken Taco Casserole perfect for busy weeknights or family gatherings.

Ingredients

  • 1/2 tablespoon olive oil
  • 1 pound ground chicken
  • 1 packet taco seasoning
  • 1 (15 oz) can beans (undrained, pinto beans, black beans, or chili beans)
  • 1 (10 oz) can diced tomatoes and green chiles
  • 1 cup frozen roasted corn (or drained canned corn)
  • 1/2 cup chicken broth or water
  • 6 extra thin corn tortillas (cut into thin strips)
  • 4 oz shredded Mexican cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  3. Brown the ground chicken, cooking for 3-4 minutes.
  4. Season the chicken with taco seasoning.
  5. Add the can of beans (undrained).
  6. Pour in the diced tomatoes and green chiles, followed by the frozen corn.
  7. Add the chicken broth or water and stir to combine.
  8. Fold in the tortilla strips.
  9. Top with shredded Mexican cheese.
  10. Bake for 15-20 minutes until the cheese melts and the edges of the tortillas are golden brown.
  11. Remove from the oven and garnish with your choice of toppings.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
