A hearty and comforting one-pot meal featuring lean ground beef, orzo pasta, and creamy Parmesan cheese.

  • 1 lb lean ground beef
  • 1 cup orzo pasta
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups beef or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)
  • 1/2 cup Parmesan cheese (freshly grated)
  • Olive oil (for sautéing)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking for 3-4 minutes until softened and fragrant.
  2. Add ground beef to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes until completely browned, then drain excess grease if necessary.
  3. Stir in tomato paste, paprika, and Italian seasoning, coating the beef evenly. Cook for an additional 2 minutes until fragrant.
  4. Pour in the broth and add orzo pasta. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender. Stir halfway through cooking.
  5. Remove from heat and stir in freshly grated Parmesan cheese until melted and creamy.
  6. Serve hot, garnished with extra Parmesan if desired.

Notes

For added flavor, serve alongside a crunchy garden salad or artisan bread. This dish also pairs wonderfully with a glass of red wine.
