Delicious grilled shrimp kabobs marinated in olive oil, lemon juice, and spices, paired with vibrant vegetables for a perfect summer dish.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetables of choice (bell peppers, onions, zucchini)
  • Skewers

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix the olive oil, lemon juice, minced garlic, paprika, salt, and pepper in a bowl.
  3. Marinate the shrimp in the marinade for 15-30 minutes.
  4. Prepare your vegetables by cutting them into bite-sized pieces.
  5. Thread the shrimp and vegetables onto the skewers, alternating them for presentation.
  6. Grill the kabobs for 2-3 minutes on each side until shrimp are pink and vegetables are tender.

Notes
