Grill up some delicious kabobs featuring juicy chicken and sweet pineapple, coated in savory teriyaki sauce for a perfect summer meal.

Ingredients

Scale
  • 1 lb boneless skinless chicken pieces (cut into 1-inch cubes)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1 green bell pepper (cut into 1-inch pieces)
  • 1 red onion (cut into 1-inch pieces)
  • 1/2 cup teriyaki sauce
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 2 cloves garlic (minced)

Instructions

  1. Marinate the Chicken: In a large bowl, combine the teriyaki sauce, olive oil, honey, grated ginger, and minced garlic. Toss in the chicken cubes, ensuring they’re well coated in this savory mixture. Let the chicken marinate for at least 15 minutes.
  2. Prepare the Veggies: While the chicken is marinating, chop your red and green bell peppers and red onion into 1-inch pieces.
  3. Assemble the Kabobs: On skewers, alternate threading chicken pieces, pineapple chunks, bell peppers, and onion.
  4. Preheat the Grill: Preheat your grill to medium-high heat.
  5. Grill the Kabobs: Place the assembled kabobs on the grill and cook for about 10 minutes, turning occasionally.
  6. Serve and Enjoy: Remove the kabobs from the grill and allow them to rest before serving.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning. Feel free to add jalapeño slices for heat or use seasonal veggies.
