A delightful and easy-to-make grilled chicken recipe marinated in a sweet and tangy Huli Huli sauce, reminiscent of Hawaiian luau flavors.

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 tablespoons ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • Green onions for garnish

Instructions

  1. Whisk together the marinade: In a bowl, mix soy sauce, brown sugar, pineapple juice, ketchup, garlic, ginger, sesame oil, and black pepper to make the marinade.
  2. Marinate the chicken: Add the chicken thighs to the marinade and let them soak for at least 1 hour or overnight.
  3. Preheat the grill: Preheat the grill to medium-high heat.
  4. Grill the chicken: Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. Let it rest: Remove from the grill and let the chicken rest for a few minutes.
  6. Garnish and serve: Garnish with chopped green onions and serve.

Notes

For extra flavor, add a splash of orange juice to the marinade or crushed red pepper flakes for heat. Use a meat thermometer for best results.
