Delightfully fluffy pancakes with a tangy twist from Greek yogurt, perfect for cozy mornings.

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk (or as needed)
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Whisk together Greek yogurt, eggs, milk, and vanilla extract until smooth.
  2. Combine flour, baking powder, sugar, and salt in another bowl.
  3. Mix the dry ingredients into the wet ingredients until just combined.
  4. Heat a skillet over medium heat and add butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Flip pancakes when bubbles form on the surface and cook until both sides are golden brown.
