A vibrant and refreshing Greek Pasta Salad that’s perfect for summer gatherings or a satisfying dinner.

Ingredients

  • 8 oz pasta (such as rotini or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions. Once al dente, drain and rinse under cold water.
  2. Prepare the vegetables by combining the cooled pasta with cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a separate bowl.
  4. Mix the dressing over the pasta salad and toss until everything is well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

For best flavor, use fresh and seasonal produce. Store leftovers in an airtight container for up to three days.
