A vibrant Greek Pasta Salad bursting with flavors and perfect for summer gatherings.

  • 8 oz pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Start by cooking the pasta according to the package instructions. Drain and let it cool to room temperature, setting the stage for our salad masterpiece.
  2. In a large bowl, combine the cooled pasta with halved cherry tomatoes, diced cucumber, bell pepper, red onion, Kalamata olives, and crumbled feta cheese. It’s a colorful medley that looks as good as it tastes!
