A vibrant Greek Orzo Salad filled with fresh vegetables and tangy feta cheese, perfect for summer picnics and gatherings.

Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the orzo pasta according to the package instructions. Once it’s al dente, drain it and let it cool.
  2. Prepare your fresh ingredients by adding the cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese to a large bowl.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl.
  4. Combine the cooled orzo with the fresh ingredients, and gently toss with the dressing.
  5. Garnish with fresh parsley before serving.

Notes

This salad can be made a day in advance; just add the dressing before serving.
