  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions; drain and let cool.
  2. Combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley in a large bowl.
  3. Whisk together olive oil, lemon juice, lemon zest, salt, and pepper in a small bowl.
  4. Add the cooled orzo to the vegetable mixture and pour the dressing over it, tossing everything together.
  5. Chill in the refrigerator for about 30 minutes before serving.

Notes
