  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated feta cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg, beaten
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups cooked orzo pasta
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the ground chicken, breadcrumbs, feta cheese, parsley, garlic, egg, oregano, salt, and pepper in a large bowl until well combined.
  3. Form small meatballs, about the size of a golf ball, and place them on a lined baking sheet.
  4. Bake the meatballs for 20-25 minutes until golden brown and fully cooked.
  5. Sauté the cooked orzo in olive oil, then add lemon juice and zest, stirring to combine.
  6. Serve the meatballs over the lemon orzo, garnished with fresh parsley.

Notes

For added flavor, consider broiling the meatballs for a few minutes at the end of baking. Swap ground chicken for turkey or a plant-based alternative for variations.
