Deliciously crispy on the outside and fluffy on the inside, these golden herb roasted baby potatoes are the perfect side dish infused with garlic, dill, and parsley.

Ingredients

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Tossing the baby potatoes with olive oil, garlic, dill, parsley, salt, and pepper in a mixing bowl.
  3. Arrange the seasoned potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  5. Serve warm once out of the oven.

Notes

Choose uniformly sized baby potatoes for even cooking. Feel free to experiment with herbs and add cheese during the last few minutes of roasting for added flavor.
