  • 1/2 cup gingerbread cookies, crushed
  • 1 tablespoon instant coffee granules
  • 1/2 cup strong brewed coffee, cooled
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 envelope unflavored gelatin
  • 2 tablespoons cold water
  • Chocolate or glaze for topping

Instructions

  1. Combine the crushed gingerbread cookies, cinnamon, ginger, nutmeg, and salt in a bowl.
  2. Warm the brewed coffee over low heat and stir in the instant coffee granules until dissolved.
  3. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes, then warm to melt.
  4. Beat the heavy cream until soft peaks form, then gradually add sugar and continue to beat until stiff peaks form.
  5. Fold the coffee mixture and melted gelatin into the whipped cream until just combined.
  6. Layer the mousse mixture carefully in a dome-shaped mold and refrigerate for at least 4 hours until set.
  7. Carefully remove the mousse from the mold and top with chocolate or glaze.
  8. Serve chilled and enjoy!
