  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the diced onion, carrots, and celery to the pot. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the shredded chicken and chicken broth to the pot. Bring to a boil, stirring occasionally.
  5. Reduce the heat and stir in the heavy cream and grated Parmesan cheese until melted and smooth.
  6. Season with salt and pepper according to your liking.
  7. Garnish with fresh parsley and serve warm.

Notes

For a richer flavor, consider using homemade chicken broth. Pre-cooked rotisserie chicken can save time.
