  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Combine in a large mixing bowl, the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, mozzarella cheese, chopped parsley, minced garlic, and chopped onion.
  3. Whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper in a separate bowl until well combined.
  4. Pour the egg mixture into the bowl with the chicken mixture and gently mix until everything is combined, being careful not to overwork the meat.
  5. Transfer the meatloaf mixture onto the prepared baking sheet or into the loaf pan. Shape it into a loaf, making sure it is even.
  6. Mix together in a small bowl, the garlic powder and the additional 1/4 cup grated Parmesan cheese. Sprinkle this mixture evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is cooked through.
  8. Remove from the oven and let it rest for about 10 minutes before slicing, which helps the juices redistribute. Serve warm with your favorite sides and enjoy!
