  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, whole and lightly crushed
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Rest the Steak: Remove steak from refrigerator and let rest at room temperature for 20 minutes.
  2. Season the Steak: Season steak on both sides with salt and pepper.
  3. Heat the Skillet: Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Sear the Steak: Add the steak to the skillet, searing for 3-4 minutes on each side for medium-rare.
  5. Baste with Butter: Reduce heat to medium-low, add butter and whole garlic cloves, and baste the steak.
  6. Rest the Steak Again: Transfer steak to a plate and let it rest, tented with foil.
  7. Prepare the Sauce: In the same skillet, pour off excess fat, then add minced garlic and cook until fragrant.
  8. Create the Cream Sauce: Stir in the heavy cream and bring to a gentle simmer, whisking in Parmesan and Dijon mustard.
  9. Adjust the Flavor: Taste the sauce and season with salt and pepper to balance the flavors.
  10. Slice and Serve: Slice the steak against the grain, plate beautifully, spoon sauce over, and garnish with parsley.
