Delicious garlic butter chicken meatballs served over creamy parmesan pasta, perfect for family dinners.

Ingredients

Scale
  • 1 pound ground chicken
  • 3 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 8 ounces pasta
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese (for sauce)
  • Parsley for garnish

Instructions

  1. Prepare the Meatball Mixture: In a bowl, combine ground chicken, minced garlic, breadcrumbs, 1/4 cup parmesan cheese, egg, salt, and pepper. Mix well until all the ingredients are incorporated and form into small meatballs.
  2. Sear the Meatballs: In a skillet, melt butter over medium heat. Add the meatballs and sear them until golden brown on all sides and cooked through—about 10 minutes, turning occasionally to ensure even cooking.
  3. Cook the Pasta: Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water if you’d like to adjust the sauce’s consistency later.
  4. Simmer the Sauce: In the same skillet where you cooked the meatballs, add heavy cream and bring it to a gentle simmer. Stir in 1 cup grated parmesan cheese until melted and the sauce becomes smooth and creamy.
  5. Combine Pasta and Sauce: Toss the cooked pasta into the cheese sauce, ensuring each strand is luxuriously coated with the creamy goodness. Add pasta water a little at a time if you need to loosen the sauce.
  6. Final Assembly and Garnishing: Serve the beautifully seared meatballs over the creamy pasta, garnishing with freshly chopped parsley for a pop of color and freshness.

Notes

Make sure not to overcrowd the skillet when searing the meatballs. Adjust garlic to your liking for stronger or milder flavor.
