A delightful Funfetti Ice Cream Cake that combines fluffy cake with creamy vanilla ice cream, perfect for celebrations and joyful moments.

Ingredients

  • 1 box of funfetti cake mix
  • 3 eggs
  • 1/2 cup of vegetable oil
  • 1 cup of water
  • 1 quart of vanilla ice cream, slightly softened
  • 1 cup of whipped cream
  • Sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the funfetti cake mix, eggs, vegetable oil, and water. Mix until smooth.
  3. Pour the colorful batter evenly into the prepared pans.
  4. Bake for 25-30 minutes, or until a toothpick comes out clean.
  5. Allow the cakes to cool completely.
  6. Once cooled, remove the cakes from the pans and place one cake layer on a serving plate.
  7. Spread a generous layer of softened vanilla ice cream over the cake.
  8. Add the second cake layer on top of the ice cream.
  9. Frost the top and sides of the cake with whipped cream.
  10. Sprinkle colorful sprinkles over the top and sides of the cake.
  11. Freeze the completed cake for at least 2 hours before serving.

Notes

For best results, check cake doneness with a toothpick and ensure ice cream is softened but not melted.
