  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup buttermilk
  • 1 cup rainbow sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition, and then stir in the vanilla extract.
  5. Alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined.
  6. Fold in the rainbow sprinkles gently to maintain their vibrant colors.
  7. Divide the batter evenly between the prepared pans and smooth the tops for an even bake.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
