A cheerful funfetti cake bursting with colorful sprinkles, perfect for celebrations.

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup rainbow sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, blending well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Fold in the rainbow sprinkles gently.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. Frost with your favorite icing and add extra sprinkles on top if desired.
