A comforting and versatile fried rice recipe perfect for using up leftover rice and vegetables.

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 23 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat until shimmering.
  2. Add the mixed vegetables and sauté for 2-3 minutes until they are tender and vibrant.
  3. Push the cooked vegetables to one side of the skillet, creating space for the eggs.
  4. Pour the beaten eggs into the open space in the skillet and scramble them until fully cooked and slightly firm.
  5. Add the cooked rice to the skillet, mixing it thoroughly with the sautéed vegetables and scrambled eggs.
  6. Pour the soy sauce over the rice mixture, stirring well to ensure everything is evenly coated.
  7. Season with salt and pepper to taste, then top with the chopped green onions for a fresh touch.
  8. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through. Serve hot, and enjoy!

Notes

Use day-old rice for best texture. Customize with your favorite proteins or spices.
