A comforting French Onion Chicken dish with tender chicken, gooey cheese, and sweet, caramelized onions, perfect for gathering around the dinner table.

  • 4 chicken breasts
  • 2 large onions, thinly sliced
  • 2 cups beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  2. Season the chicken breasts generously with salt and pepper. Push the caramelized onions to one side of the skillet and place the chicken breasts in the center. Cook until browned, roughly 4-5 minutes on each side.
  3. Pour in the beef broth, scraping up any bits stuck to the pan. Cover and allow to simmer for 15-20 minutes, or until the chicken is cooked through.
  4. Preheat your oven to 400°F (200°C).
  5. Sprinkle the Gruyère cheese over the top of the chicken and onions.
  6. Transfer the skillet to the preheated oven, allowing it to bake until the cheese is melted and bubbly, about 10 minutes.
  7. Garnish with fresh thyme or parsley before serving.

Notes

Serve with crusty French bread or a light green salad dressed with vinaigrette. A glass of red wine pairs beautifully.
