Ingredients

Scale
  • 1 cup almond flour
  • 2 cups powdered sugar
  • 4 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 280°F (140°C) and line your baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar to remove any lumps.
  3. Beat the egg whites until frothy, gradually adding the granulated sugar until stiff peaks form.
  4. Add the vanilla extract and food coloring, if using, then gently fold in the dry ingredients.
  5. Transfer the batter to a piping bag and pipe circles onto the baking sheets.
  6. Tap the sheets on the counter to release air bubbles and let them rest for 30 minutes.
  7. Bake for 15-18 minutes and let them cool completely before filling.

Notes

Use aged egg whites for best results and bake on a dry day to avoid issues with humidity.
