A delicious twist on comfort food combining gooey Swiss cheese, tender roast beef, and caramelized onions in a crispy French bread sandwich, served with warm au jus.

  • 8 slices Swiss cheese
  • 12 oz thinly sliced roast beef
  • 2 medium yellow onions (thinly sliced)
  • 4 tbsp unsalted butter (plus extra for spreading)
  • 1 tbsp olive oil
  • 2 cups low-sodium beef broth
  • 2 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1 clove garlic (minced)
  • 1 sprig fresh thyme
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Sauté the onions: In a large skillet over medium heat, melt 1 tablespoon of butter with olive oil. Add sliced onions and sauté, stirring frequently, until deeply caramelized and golden brown—this should take about 12 to 15 minutes. Once they’re perfectly caramelized, transfer the onions to a plate and set aside.
  2. Prepare the broth mixture: Wipe the skillet clean to get rid of any leftover bits. In a small saucepan, combine beef broth, Worcestershire sauce, soy sauce, minced garlic, and thyme. Bring this mixture to a gentle simmer for about 5 minutes. Season with salt and pepper to your preference, then strain it through a small strainer and keep warm.
  3. Assemble the sandwiches: On a clean work surface, lay out 4 slices of bread. Start layering each with 1 slice of Swiss cheese, a generous portion of roast beef, the golden caramelized onions, and another slice of Swiss cheese. Cover each with the remaining slices of bread.
  4. Butter and grill: Spread unsalted butter evenly on the outsides of each sandwich. Heat a clean skillet or griddle over medium heat and grill the sandwiches for 3 to 4 minutes on each side, pressing gently, until the bread is crisp and golden and the cheese is perfectly melted.
