A comforting dish featuring tender chicken thighs and savory rice infused with onions and garlic, all enveloped in a creamy mushroom sauce.

Ingredients

  • 4 chicken thighs
  • 1 cup rice
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the rice, chopped onion, and garlic powder in a large baking dish.
  3. Place the chicken thighs on top of the rice mixture.
  4. Mix the chicken broth and cream of mushroom soup, then pour over the chicken and rice.
  5. Season generously with salt and pepper.
  6. Add frozen mixed vegetables if desired.
  7. Cover the dish with foil and bake for 1 hour.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is golden.

Notes

For extra sauciness, add an additional half cup of chicken broth. This dish can be made ahead and stored in the refrigerator for up to 3 days.
