A delightful dish featuring smoky sausage, tender shrimp, and a medley of veggies, all wrapped in foil for easy cooking and cleanup.

  • 1 pound shrimp, peeled and deveined
  • 1/2 pound smoked sausage, sliced into 1/2-inch pieces
  • 2 cups baby potatoes, halved
  • 1 cup corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 4 sheets aluminum foil, 12×12 inches each

Instructions

  1. Preheat your grill to medium-high heat, around 400°F.
  2. Combine olive oil, lemon juice, paprika, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Add the shrimp, sausage, halved baby potatoes, and corn to the bowl; toss to coat.
  4. Divide the mixture evenly among the four aluminum foil sheets.
  5. Fold the sides of the foil over the mixture and seal the edges tightly.
  6. Place the foil packs on the preheated grill; cook for 15 to 20 minutes.
  7. Open the foil packs carefully and sprinkle with parsley before serving.

Notes

Ensure that your foil packets are sealed tightly to avoid steam escaping. Feel free to substitute shrimp for chicken or tofu.
