A comforting bowl featuring succulent chicken and earthy sweet potatoes drizzled with a delightful maple Dijon sauce.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes and toss them in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  3. Mix together the Dijon mustard and maple syrup in a bowl.
  4. Season the chicken breasts with salt and pepper, then brush with the maple Dijon mixture.
  5. Heat a skillet over medium heat. Place the chicken breasts in the skillet and sauté for 6-7 minutes on each side until cooked through.
  6. Combine the roasted sweet potatoes and sliced chicken in a bowl. Drizzle remaining sauce over the top and garnish with fresh parsley.

Notes

For extra crispy sweet potatoes, ensure they are spread out evenly on the baking sheet. You can substitute sweet potatoes with butternut squash or Brussels sprouts if desired.
