A delightful summer appetizer featuring fresh tomatoes, mozzarella, and basil atop crispy toasted bread.

Ingredients

  • 1 baguette or Italian bread
  • 2 cups diced tomatoes
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch thick slices and place on a baking sheet.
  3. Brush each slice with olive oil and toast in the oven for 5-7 minutes until golden and crispy.
  4. Combine the diced tomatoes, mozzarella, basil, garlic, and another splash of olive oil in a bowl. Season with salt and pepper.
  5. Top each toasted bread slice with a generous spoonful of the tomato mixture.
  6. Drizzle with balsamic glaze if desired.
  7. Serve immediately for best enjoyment.

Notes

Use ripe, in-season tomatoes for the best flavor. Store leftover tomato mixture in the fridge for up to two days, keeping toasted bread separate.
