A hearty and nutritious taco soup filled with protein-rich ingredients and bold flavors, perfect for a cozy meal.

Ingredients

  • 1 lb ground turkey or beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup beef or chicken broth
  • 1 cup water
  • 1 bell pepper, diced
  • 1 onion, diced

Instructions

  1. Browning the Meat: In a large pot or Dutch oven, brown the ground turkey or beef over medium heat until it’s cooked through and golden.
  2. Softening the Vegetables: Add the diced onion and bell pepper to the pot, cooking until softened and fragrant, about 3-5 minutes.
  3. Adding Flavor: Sprinkle in the taco seasoning and stir well, ensuring the meat and veggies are coated in all those wonderful spices.
  4. Combining Ingredients: Next, add the black beans, corn, diced tomatoes, broth, and water. Give everything a good stir to combine.
  5. Bringing to a Boil: Turn up the heat and bring your soup to a boil, watching as it starts to bubble with excitement.
  6. Simmering Away: Once boiling, reduce the heat and let it simmer for 20-30 minutes. It’s during this time that all those flavors meld together beautifully.

Notes

Serve warm garnished with fresh cilantro, avocado, sour cream, or cheese. This soup can be stored in the fridge for 3-4 days or frozen for up to 3 months.
