These fluffy egg bites, inspired by Starbucks, are packed with cottage cheese, bacon, and cheddar. Perfect for breakfast or brunch!

Ingredients

  • 8 large eggs
  • 3/4 cup cottage cheese (4% milkfat recommended)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup cooked, chopped bacon
  • 1/3 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat the oven to 350°F (175°C) and generously spray a 12-cup silicone or metal muffin pan with cooking spray.
  2. Add the eggs, cottage cheese, salt, and pepper to a high-speed blender. Blend on high for about 30 seconds until smooth.
  3. Divide the egg mixture evenly between the muffin cups, filling each a little more than halfway full.
  4. Top each egg bite with bacon, cheddar cheese, and chives, distributing the toppings evenly.
  5. Bake for 22-25 minutes until the eggs are set and edges are golden brown. Start checking at the 20-minute mark.
  6. Remove from the oven and let cool for about 5 minutes before enjoying warm.

Notes

These bites can be refrigerated for up to 4 days or frozen for 2 months. Reheat in the microwave for 30-60 seconds.
