  • 2 cups Medjool dates, pitted and chopped
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 cup almond flour (or regular all-purpose flour)

Instructions

  1. Start by washing your Medjool dates, ensuring they are clean and ready to integrate into your cake. Once pitted and chopped, these little nuggets of sweetness are the star of the show.
  2. In a mixing bowl, crack the two large eggs. Using a whisk or fork, beat the eggs until they are light and frothy.
  3. To the bowl with the beaten eggs, add the chopped dates and baking powder. Stir everything together until the ingredients are well combined.
  4. Gently fold in the almond flour (or your choice of alternative flour). The mixture will start forming a thick batter.
  5. Preheat your oven to 350°F (175°C). Grease and line a cake pan or baking dish.
  6. Spoon the thick batter into your prepared baking dish, smoothing out the top with the back of your spatula.
  7. Place the pan in the preheated oven and bake for about 25 minutes.
  8. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes.
