Quick and delicious shrimp tacos bursting with flavor, perfect for busy weeknights.

  • 1 pound raw shrimp (peeled & deveined)
  • 1 tablespoon taco seasoning
  • 14 ounces bag of coleslaw mix
  • 1/2 cup plain yogurt
  • 1/4 cup mayonnaise
  • Juice of 1 lime
  • 9 corn tortillas

Instructions

  1. Prepare the Shrimp: In a medium bowl, combine shrimp, taco seasoning, garlic powder, and black pepper. Ensure shrimp are well-coated in that flavorful mix.
  2. Whip Up the Sauce: In a small bowl, mix yogurt, mayo, lime juice, additional taco seasoning, cayenne pepper, and ground black pepper to create the sauce.
  3. Cook the Shrimp: Heat a non-stick skillet over high heat and cook the seasoned shrimp until pink on both sides—about 2-3 minutes per side.
  4. Mix the Slaw: In a large bowl, combine coleslaw mix with chopped cilantro and most of the sauce (reserve some for drizzling).
  5. Warm the Tortillas: Warm corn tortillas in the skillet for about 10 seconds on each side until they’re soft.
  6. Assemble the Tacos: Place shrimp and slaw in each tortilla and drizzle with the reserved sauce.

Notes

For a kick, substitute mayo with sriracha mayo or add jalapeños to the slaw. Leftovers can be stored separately in the fridge for two days.
