Delightful Easter Funfetti Cookies bursting with colorful sprinkles, perfect for celebrating spring festivities.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pastel sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Combine the dry and wet ingredients until just mixed. Gently fold in the pastel sprinkles.
  6. Shape rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring them to a wire rack.
