Delightful coconut bites shaped like bunny tails, perfect for Easter festivities.

Ingredients

  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • Edible candy eyes
  • Chocolate syrup (for decoration)

Instructions

  1. Mix the shredded coconut, sweetened condensed milk, and vanilla extract in a bowl until well combined.
  2. Shape the mixture into small balls and place them on a parchment-lined baking sheet.
  3. Melt the white chocolate chips in a microwave or a double boiler until smooth.
  4. Coat each coconut ball in the melted chocolate.
  5. Add edible candy eyes to the coconut balls before the chocolate hardens.
  6. Drizzle chocolate syrup on top for decoration.
  7. Chill in the fridge for about 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Freezing is also possible for up to a month.
