A luscious, creamy filling perfect for cakes, tarts, and pastries, with a silky texture and sweet flavor.

Ingredients

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Combine the milk and half of the sugar in a saucepan. Heat over medium heat until warm.
  2. Whisk together the egg yolks, remaining sugar, and cornstarch in a separate bowl until smooth.
  3. Gradually add the warm milk to the egg mixture, whisking constantly to temper the eggs.
  4. Pour the mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens. Remove from heat and stir in vanilla extract.
  5. Allow to cool, then fold in the whipped cream until fully combined.
  6. Use immediately as a filling or store in the fridge until needed.

Notes

Whisk continuously while adding the warm milk to prevent scrambling. Cool to room temperature before folding in whipped cream for fluffiness.
