  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter, melted
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine the diced peaches with sugar and cinnamon and set aside.
  2. Mix together the flour, baking powder, and a pinch of salt in another bowl.
  3. Whisk together the melted butter, milk, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients until just blended, leaving a few lumps.
  5. Spoon a layer of the peach mixture into dessert cups, followed by a layer of batter. Repeat the layers.
  6. Pop the cups into the oven and bake for 20-25 minutes or until golden brown.
  7. Allow them to cool, then mix cream cheese with whipped cream until fluffy for the filling.
  8. Top each cup with the creamy filling and serve warm or chilled.
