Easy and impressive individual servings of peach cobbler, perfect for any gathering.

Ingredients

  • Fresh peaches, diced
  • Sugar
  • Cinnamon
  • Butter
  • Flour
  • Baking powder
  • Milk
  • Vanilla extract
  • Cream cheese
  • Whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine the diced peaches with sugar and cinnamon. Let those flavors mingle and set aside!
  2. Mix together the flour, baking powder, and a pinch of salt in another bowl.
  3. Whisk together the melted butter, milk, and vanilla extract in a separate bowl until smooth.
  4. Combine the wet and dry ingredients until just blended, being careful not to overmix.
  5. Spoon a layer of the peach mixture into dessert cups, followed by a layer of the batter. Repeat until cups are filled.
  6. Bake for about 20-25 minutes, or until golden brown.
  7. Allow to cool, then prepare the filling by mixing cream cheese with whipped cream until fluffy.
  8. Top each cup with the creamy filling and serve warm or at room temperature.

Notes

Pairs well with vanilla ice cream or warm caramel sauce. Store leftovers in an airtight container for up to 3 days.
