Ingredients

  • 1 cup mashed banana
  • 1 cup canned chickpeas, rinsed and drained
  • 1/2 cup cocoa powder
  • 1 cup oats
  • 1/4 cup honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas until smooth.
  3. Add the rinsed and drained chickpeas to the bowl and mash them together with the bananas.
  4. Stir in the cocoa powder, oats, honey (if using), vanilla extract, salt, and baking powder until well combined.
  5. Scoop spoonfuls of the cookie dough onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until the edges are set and the tops are slightly firm.
  7. Allow the cookies to cool on the baking sheet before transferring them to a wire rack.

Notes

For added sweetness, consider using honey or maple syrup. Store cookies in an airtight container for up to 3 days or freeze for up to a month.
