A rich and indulgent pecan pie cheesecake that combines creamy cheesecake with crunchy pecans over a graham cracker crust.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 1/2 cup caramel sauce (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Beat the softened cream cheese, sugar, and vanilla extract together until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the prepared crust.
  7. Mix together chopped pecans, corn syrup, brown sugar, and salt, then pour this over the cheesecake layer.
  8. Bake for 55-60 minutes until the center is set.
  9. Cool at room temperature for about an hour, then refrigerate for at least 4 hours.
  10. Drizzle with caramel sauce before serving.

Notes

Make it ahead of time as the cheesecake tastes better the next day. Substitute graham crackers with crushed cookies if needed.
