A rich and moist chocolate layer cake with creamy filling and smooth ganache, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Mix in eggs, milk, oil, and vanilla extract until smooth.
  4. Incorporate boiling water until well combined.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool the cakes in the pans for about 10 minutes, then transfer to wire racks.
  8. Whip the heavy cream with powdered sugar until soft peaks form; fold in cream cheese.
  9. Assemble the cake by placing one layer on a platter and spreading cream filling on top.
  10. Prepare the ganache by heating heavy cream and pouring it over chocolate chips until smooth.
  11. Drip the ganache over the cake, letting it cascade down the sides.
  12. Chill before serving to set the ganache.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 1 month.
