A refreshing and creamy salad perfect for warm-weather eating, featuring avocado, cherry tomatoes, and cucumber.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh cilantro or basil for garnish (optional)

Instructions

  1. Combine the diced avocado, halved cherry tomatoes, diced cucumber, and thinly sliced red onion in a large mixing bowl.
  2. Create the dressing by whisking together the olive oil and lemon juice in a small bowl, then pour it over the salad.
  3. Toss everything gently to combine, being careful not to mash the avocado.
  4. Season with salt and pepper to taste.
