Cuban Black Beans and Rice

A delicious and comforting dish that combines healthy ingredients with bold flavors, perfect for vegetarians and meal prepping.

Ingredients

  • 1 cup black beans
  • 1 cup white rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups vegetable broth or water
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse the black beans and soak them overnight if using dried beans. If using canned beans, skip this step.
  2. Heat the olive oil over medium heat in a pot. Add chopped onions and garlic, and sauté until softened.
  3. Add the soaked black beans, cumin, oregano, salt, and pepper. Pour in vegetable broth or water; bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 60 minutes or until beans are tender. If using canned beans, simmer for about 20 minutes.
  5. Cook the rice according to package instructions in another pot.
  6. Serve the black beans over the rice, and garnish with fresh cilantro if desired. Enjoy!

Notes

For more flavor, consider adding a bay leaf while cooking the beans or some chopped jalapeños for heat.
