A creamy, rich Tuscan-inspired chicken dish slow-cooked to perfection with sun-dried tomatoes and spinach.

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups spinach, chopped
  • 1 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot, ensuring they’re evenly positioned for consistent cooking.
  2. Mix together sun-dried tomatoes, heavy cream, chicken broth, minced garlic, Italian seasoning, salt, and pepper in a bowl to create a luscious sauce.
  3. Pour the creamy mixture over the chicken, making sure each piece is generously coated.
  4. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  5. Add the chopped spinach and stir in the grated Parmesan cheese in the last 30 minutes of cooking.
  6. Serve warm over pasta or rice, enjoying the blend of flavors.

Notes

For extra flavor, sear the chicken before adding it to the crockpot. This dish can also be stored in an airtight container for up to 3 days.
