  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Combine the chicken breasts, diced tomatoes, chicken broth, heavy cream, minced garlic, and dried herbs in a slow cooker. Season with salt and pepper.
  2. Choose to cook on low for about 6 hours or on high for 3 hours.
  3. Add the orzo pasta into the slow cooker and stir well just before serving.
  4. Cook for an additional 30 minutes until the orzo is tender.
  5. Serve hot, garnished with fresh basil.

Notes

For added flavor, consider browning the chicken before adding it to the slow cooker. Store leftovers in an airtight container for up to 3 days.
