Delicious and healthy crispy baked zucchini fries, perfect for a keto diet.

Ingredients

  • 2 medium zucchini
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs
  • Olive oil spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchini into fry-shaped pieces.
  3. In a bowl, mix the almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. In a separate bowl, beat the eggs.
  5. Dip zucchini pieces into the eggs, then coat them with the almond flour mixture.
  6. Place the coated zucchini fries on a baking sheet lined with parchment paper and spray lightly with olive oil.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Serve with your favorite dipping sauce.
