Delightfully crispy roast potatoes seasoned with herbs and spices, perfect for any meal.

Ingredients

  • Potatoes (Russets or Yukon Golds recommended)
  • Olive oil (or vegetable oil or duck fat)
  • Salt
  • Pepper
  • Garlic powder
  • Rosemary
  • Thyme
  • Smoked paprika
  • Fresh herbs (optional)
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel (if desired) the potatoes, cut them into even chunks, about 1 to 2 inches in size.
  3. Place the cut potatoes in a large pot of salted water and bring to a boil. Cook for about 5-7 minutes.
  4. Drain the potatoes and return them to the pot. Allow to sit for a few minutes to let off steam.
  5. Shake the pot gently to roughen up the edges of the potatoes.
  6. Drizzle the potatoes with oil and sprinkle with salt and seasonings, then toss gently to coat.
  7. Spread the potatoes out in a single layer on a baking sheet and roast for about 30-40 minutes, turning halfway through.
  8. Check for golden brown and crispy exterior.
  9. Remove from the oven and serve hot, garnished with fresh herbs if desired.

Notes

These potatoes can be customized with different seasonings or toppings. Store leftovers in an airtight container in the fridge for up to 3 days.
